The grapes come from a rigorous selection of 350 hectares of vines in an area stretching from Carcassonne to the Pyrenees foothills and is located in Languedoc-Roussillon, largest wine-making region in France. The different plots offer different microclimates and soil composites. Based on location, the vineyards benefit from the advantages of both the Mediterranean and Atlantic climate, allowing the resulting wines to have a good balance between fruitiness and freshness. Yield control and restraint is crucial in ensuring full varietal character expression. Same commitment continues in the cellar: the wine undergoes a long, cool fermentation in small temperature-controlled tanks.
